“Ataya” is a lot more than just tea…
This tea ceremony includes three cups of tea. Each cup gets a little sweeter, just as friendship grows sweeter as you spend more time with your friend. This is an adapted version of the ceremony, using Western ingredients, tools, and measurements. The actual ceremony requires special glasses and a special teapot.
1. Boil water. Add green tea and steep. Pour the steeped tea into three different teapots. In the first teapot, add ¼-cup of sugar. In the second teapot, add ¼-cup of sugar and ¼-cup of freshly crushed mint leaves or after-dinner mint candies. In the third teapot, add ½-cup of sugar and ½-cup of freshly crushed mint leaves or after-dinner mint candies.
2. Pour tea from the first teapot into two cups for each friend. They will pour the mixture back and forth between the cups. A foam will begin to settle on the top of the tea. Once the mixture is cooled, drink it together.
3. Pour tea from the second teapot into the same two cups for each friend. They will repeat the process of pouring between the cups. When the foam is slightly more than the last cup, drink.
4. Pour tea from the final teapot into the same two cups for each friend. Repeat the pouring between the cups. This cup will foam even more. Enjoy the tea together.
